Marshmallow Custard: Tangy Pineapple Cherry Surprise

Ingredients

  • 2 cups water, divided
  • 6 tablespoons of agar powder, divided
  • 1 can (21 ounces) cherry pie filling
  • 3 ounces vegan cream cheese, softened
  • 1/3 cup vegan mayonnaise
  • 1 can (8 ounces) crushed pineapple, undrained
  • 1 cup Funky Mello vanilla marshmallows, quartered
  • 1/2 cup vegan whipped topping
  • 2 tablespoons chopped pecans

Directions

  • In a large saucepan, bring 1 cup of water to a boil.
  • Stir in 3 tablespoons of agar powder until dissolved.
  • Stir in pie filling.
  • Pour into an 11x7-in. dish.
  • Cover and refrigerate for 2 hours or until set.
  • In a small saucepan, bring remaining water to a boil.
  • Stir in 3 tablespoons of agar powder until dissolved.
  • In a small bowl, beat the vegan cream cheese and vegan mayonnaise until smooth.
  • Beat in the crushed pineapple.
  • Cover and refrigerate for 45 minutes.
  • Fold in the marshmallows and whipped topping.
  • Spoon over cherry layer; sprinkle with pecans.
  • Cover and refrigerate for 2 hours or until set.
