Almond Marshmallow Truffles | Funky Mello

  • 1 container of Funky Mello marshmallow creme (any flavor - we used cherry!)
  • 1 cup of almond flour
  • 1 1/2 cup of semi-sweet chocolate chips
  • Sliced almonds (for garnish)

  1. In a large bowl, combine marshmallow fluff and almond flour. Knead the mixture until well blended.
  2. Roll the mixture into small truffle-sized balls and place them on a parchment paper-lined baking sheet.
  3. Freeze the truffle balls for about 30 minutes, or until they are firm.
  4. Meanwhile, melt the semi-sweet chocolate in a double boiler over low heat, stirring constantly until smooth.
  5. Using a fork or toothpick, dip each truffle ball into the melted chocolate until fully coated. Allow the excess chocolate to drip off before placing the truffle back on the parchment paper.
  6. Once all the truffles have been coated in chocolate, sprinkle sliced almonds over the top of each truffle to decorate.
  7. Let the chocolate set by placing the truffles in the refrigerator for about 10 minutes.
  8. Once the chocolate has hardened, serve and enjoy your delicious almond marshmallow truffles!
