Almond Marshmallow Truffles
Craving a bite-sized chocolate treat? Here's a simple recipe for marshmallow truffles!
(It's vegan and gluten-free.)
Ingredients
- 1 container of Funky Mello marshmallow creme (any flavor - we used cherry!)
- 1 cup of almond flour
- 1 1/2 cup of semi-sweet chocolate chips
- Sliced almonds (for garnish)
Instructions
- In a large bowl, combine marshmallow fluff and almond flour. Knead the mixture until well blended.
- Roll the mixture into small truffle-sized balls and place them on a parchment paper-lined baking sheet.
- Freeze the truffle balls for about 30 minutes, or until they are firm.
- Meanwhile, melt the semi-sweet chocolate in a double boiler over low heat, stirring constantly until smooth.
- Using a fork or toothpick, dip each truffle ball into the melted chocolate until fully coated. Allow the excess chocolate to drip off before placing the truffle back on the parchment paper.
- Once all the truffles have been coated in chocolate, sprinkle sliced almonds over the top of each truffle to decorate.
- Let the chocolate set by placing the truffles in the refrigerator for about 10 minutes.
- Once the chocolate has hardened, serve and enjoy your delicious almond marshmallow truffles!
