Springtime Crispy Treats

Easter eggs may belong in baskets but they're even more adorable on these treats!

7 Ingredients

  • 1/4 teaspoon water
  • 2 to 4 drops food coloring
  • 1/2 cup flaked coconut
  • 3 tablespoons unsalted vegan butter
  • 1 tub of Funky Mello marshmallow creme
  • 6 cups rice cereal
  • Small vegan jelly beans and/or chocolate eggs, for garnish


Coat cupcake tins with cooking spray (enough to yield 16 treats).

In a small bowl, stir together water and green food coloring. Add coconut. Stir until coconut is tinted. Spread on a baking sheet to dry.

In a large saucepan, melt butter over low heat. Add marshmallow creme and stir until combined. Remove from heat.

Add cereal. Stir until well coated.

Using lightly greased hands, divide the warm mixture into cupcake tins. Shape mixture into individual cups. Cool. Remove from pans.

Fill cooled nests with coconut, jelly beans or chocolate eggs. These are best when eaten the same day.
