  • 2 cups fresh cranberries, finely chopped
  • 1 cup pineapple, diced
  • 1 cup mandarin oranges, drained
  • 1 cup shredded coconut
  • 1 cup unsweetened coconut cream
  • Funky Mello marshmallow creme


  1. Finely chop fresh cranberries, dice pineapple, drain mandarin oranges, and chop pecans.
  2. In a large mixing bowl, combine the chopped cranberries, diced pineapple, drained mandarin oranges, and shredded coconut.
  3. Gently toss the ingredients until well combined. Ensure an even distribution of fruits.
  4. Pour the coconut cream and marshmallow creme over the cranberry ambrosia mixture.
  5. Gently fold the creme mixture into the cranberry ambrosia until all ingredients are coated in the creme.
  6. Cover the bowl and refrigerate for at least 2 hours to allow flavors to meld and the ambrosia to chill.
  7. Before serving, give it a final gentle toss. Serve your vegan cranberry ambrosia chilled, and enjoy the burst of fruity, marshmallow goodness!
