Holiday Crispy Treats | Funky Mello

  • 1/4 cup vegan butter
  • 1 (6-ounce) tub Funky Mello marshmallow creme
  • 1 teaspoon vanilla extract
  • 6 cups crispy rice cereal
  • 1 cup holiday-themed sprinkles
  • 1 cup white chocolate chips (optional, for drizzling)

  1. Line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal later. Lightly grease the parchment with cooking spray.
  2. In a large saucepan over medium heat, melt the butter. Once melted, add the entire jar of marshmallow creme to the saucepan. Stir continuously until the marshmallow creme is fully melted and well combined with the butter.
  3. Remove the saucepan from heat and stir in the vanilla extract. Mix until the vanilla is evenly distributed.
  4. Pour the crispy rice cereal into the saucepan with the marshmallow mixture. Gently fold and stir until the cereal is completely coated.
  5. Quickly fold in the holiday-themed sprinkles. Make sure they are evenly distributed throughout the mixture.
  6. Transfer the mixture into the prepared baking pan. Use a spatula or lightly greased hands to press the mixture firmly and evenly into the pan.
  7. Allow the rice crispy treats to cool at room temperature for at least 1-2 hours or until they are fully set.
  8. If desired, melt the white chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each interval until smooth. Drizzle the melted white chocolate over the cooled rice crispy treats.
  9. Once the treats are fully set and the drizzle (if added) has hardened, use the parchment paper overhang to lift the treats out of the pan. Place them on a cutting board and cut into squares or rectangles.

Feel free to customize the recipe with your favorite holiday-themed additions or decorations.

Happy baking!
